All of us at Ondine care passionately about sustainability, which is why we are proud to announce that we are the
first restaurant in Scotland to support the National Lobster Hatchery's ‘Buy one, set one free’ donation scheme.
Their work is vital, not only to conserve fragile lobster populations in the UK, but also to safeguard our fishing
and seafood industry. That's why, from this month on, we will add a voluntary donation of £1 to your final bill
for each lobster that you order, which we will then match, donating £1 towards helping raise and release a
baby lobster back into British waters, sustaining vulnerable stocks of this truly incredible animal.
With more than 75% of the world's fish stocks either fully exploited, over exploited, depleted or recovering
there has never been as much pressure on fish stocks than now - so we hope you will all help us play a significant
part in helping to ensure there will still be healthy stocks of lobsters in our oceans for generations to come!
