Through the years I've worked alongside Mark Hix in London and Rick Stein in Padstow but there is no place like home and the fabulous produce we work with every day.

Favourite dish? It has to be the Hot Shellfish Platter. For the taste, the wonderful smell and the sheer theatre of the experience, it is truly unbeatable.
